When I was dairy-free, there were a few “comfort foods” I missed. One of them is ice cream, the other is cheesecake. This banana ice cream recipe is so simple, it only takes few minutes to make. It’s so much healthier than ice cream made with pasteurized milk and white processed sugar.
Money saving tip: I buy bananas when they are on sale and freeze them in small ziplock bags.
To make the “faux” ice cream, simply place the frozen bananas and the tsp of vanilla extract into the blender, and blend it until it is smooth. I use my Vitamix, so I have to stop it and push the bananas down a few times. Once it is well mixed I add some almond milk or water to get a smoother texture. Sometimes I use a little bit of maple syrup as a topping if I have it in the fridge. If you like bananas, you will love it!!!
