These Healthy Rice Crispy treats are easy to make and they are delicious. They are a great snack for kids. This recipe does not contain marshmallows or processed sugar.

I came up with this recipe after taking inventory of a few things I had in my cabinet that needed to be used. I had some organic sprouted rice crisps in my cabinet which were in danger of going stale, and a jar of plain almond butter was collecting dust because it was PLAIN.

Creativity and necessity brought about this healthy version of rice crispy treats. I was delighted it turned out well the first try.

This recipe can easily be doubled. This batch makes about 6 squares.

Ingredients

Organic Sprouted Rice Crisps – Rice can be contaminated with Arsenic, but organic rice is usually clean. I buy the sprouted version because it is properly prepared, which makes it easier to digest.

Organic Coconut Oil – I use unrefined, cold-pressed, organic coconut oil. The coconut oils which are processed in the least invasive way are the healthiest.

Almond Butter – Sprouted almond butter is the healthiest type to use, the sprouting process reduces the phytic acid in it. (Phytic acid can reduce the absorption of the minerals in the almonds). I don’t always use sprouted almond butter, because it is very hard to find at the local grocery stores. It is the best option if available.

Honey – I usually buy local honey from my favorite farm store. Maple syrup would probably work well too. You could skip the honey if your almond butter is already sweetened, and add a little more almond butter to the recipe. (I have not tried this yet, but it should work).

Sea Salt – I use celtic sea salt. It is all natural and has no additives.

Recipe

2 cups of sprouted brown rice crisps
1/2 cup almond butter
1/4 cup honey
1/4 cup coconut oil
A pinch of sea salt

1. Line a 9 inch square pan with parchment paper.

2. Melt the almond butter, honey, and coconut oil in a pot over low heat and stir until the lumps are gone. Add the pinch of salt.

3. Mix the sweetened almond butter and the rice crisps in a bowl. Then transfer to the lined pan and push down on the rice crispy mixture until it is flat. (Push down well, otherwise it makes a bigger mess when they are eaten).

4. Refrigerate for an hour.

5. Cut into squares and serve.
