Cream of Mushroom Soup with A2 Milk

Homemade Cream of Mushroom Soup has been on my bucket list for a while. Today I figured out a way to get the desired creamy texture without using cream, and this recipe is also gluten free.

The secret ingredient is Cassava Flour.

Why A2 Milk?

This recipe does have milk in it, but I use a special type of milk called A2 milk. Many people who think they are lactose intolerant might really be sensitive to a protein in milk called casein. There are different types of proteins in milk and A1 casein is the protein which if often problematic. Goat milk does not have A1 beta-casein in it, it is a type of A2 milk. In this country, most cow’s milk contains A1 beta-casein, which can cause health problems. (Many of us cannot digest it). However, A2 cow’s milk is available, if you know where to look for it. A2 milk is the only milk I use now. (I wrote a post about A2 milk a few years ago, if you want to read more about it. It is very interesting).

Winter Quest

My quest this winter is to incorporate more real bone broth into my families’ diet. Last month I re-read a book called Deep Nutrition: Why Your Genes Need Traditional Food, and I was inspired. Real bone broth is incredibly nutritious, and it is one of the “Four Pillars of Good Health”, according to this book.

Also, bone broth is supposed to be really good for the skin, it prevents wrinkles. I believe it, when I lived in South Korea I was very impressed by the youthful appearance of the older Korean women. These women drink real soup, daily. Seaweed soup was one of the first foods I learned how to make in South Korea. They take their soups seriously there.

Last week the “ soup de la semaine” was broccoli soup. It was delicious, and of course I did not write down the recipe. So tonight, I wrote down the recipe for this Cream of Mushroom soup immediately after I finished devouring it.

Dairy products can be “mucus forming”, so I moderate most dairy consumption this time of the year. (You know, the middle of winter, peak flu season).  However, I have read it is A1 beta-casein that causes the body to produce mucus, so if you can find A2 milk this soup should not cause your sinuses to go crazy. I also chose to use A2 cow’s milk instead of goat milk because there is NO WAYI could have gotten my husband to eat soup made with goat milk. It is right up there with coconut milk on his “do not even think about using” list. (Though I did use goat cheddar last week in the broccoli soup and he did not notice, lol).

A2 cow’s milk has made my life SO much easier because it does not taste any different than regular cow’s milk, and everyone in my home can have it, even my sensitive kiddo.

The Recipe

1.5 cups of chicken broth
1 cup of milk
4 cups of button mushrooms
3 TBS butter (or ghee)
3 TBS cassava flour
½ tsp salt
¼ tsp pepper
1/8 tsp thyme

1.Combine all of the ingredients except ¼ cup of the mushrooms, butter and cassava flour in a blender. Blend the ingredients for a few minutes. (I do have a soup setting on my Vitamix, but it is not necessary. Just blend it well).

2.While the soup “mixture” is blending, melt the butter in a small pot, and add the cassava flour. Mix it for a few minutes until thickened.

3.Pour the soup mixture from the blender into a pot and let it simmer for 15 minutes.

That’s it, it was very easy to make. The cool part is it was very thick, the cassava flour really is the trick for that. I am sure other flours can be used instead, but the resulting soup will not have the same texture.

Cream of Mushroom soup is a great base for many casserole dishes! I am so happy this recipe was a hit in my home. (My husband even liked it, and he does not like some of the weird healthy foods I make/like. )

I would have used onions in this recipe, but I seem to be the only one in my family who loves them. I might incorporate some Vidalia onions in the future, which seem to be tolerated.
